Roasting Rates and Elementary Mechanisms
Roasting processes are divided into severa! elementary mechanisms, any of which could be significant or predominant in a particular roast. The elementary processes considered inelude beat transfer, gas-solid interactions with accompanying mass transfer between the bed and furnace atmosphere, vapor phase transport processes in solid-solid interactions, and solid phase diffusion processes. Examples are chosen of processes in which one of these mechanisms predominates and sorne recently obtained data is presented to support the existence and significance of these mechanisms. Proposais are also made for future research in these areas, and for utilizing the information in the improvement of roaster capacities.
